Markets of the Friuli region, particularly Trieste, are filled with an abundance of color, texture and a remarkable array of produce, meat and fish. Many of the stands have their goods carefully and artistically arranged, each piece part of an edible sculpture. Individual buyers compete elbow to elbow with restauranteurs, buying full boxes, or purchasing a single piece.
